Maple syrup grading
Every bottle of pure New Hampshire maple syrup tells a story — shaped by our weather, soil, and the timing of each sugaring season. Syrup is graded by flavor and color (how much light shines through), but one thing never changes: the quality. No matter the grade, every drop is 100% pure and made with care by local sugar makers.
Golden • Delicate Taste
The first sap runs of early spring bring this golden treasure. Light in color with a smooth, delicate flavor, Golden syrup is perfect for drizzling over pancakes or ice cream — and it’s often used to make maple candy, cream, and sugar.
Amber • Rich Taste
As the days warm, the syrup deepens in color and flavor. Amber syrup offers that classic, full-bodied maple taste so many people love. It’s a favorite for breakfast, baking, and everything in between.
Dark • Robust Taste
Toward the end of the season, syrup turns a rich, dark amber and develops a bold, hearty flavor. Dark syrup is perfect for those who crave a strong maple taste — and it shines in both cooking and baking.
Very Dark • Strong Taste
The final runs of sap produce this deep, flavorful syrup with an unmistakably strong maple character. While still delicious at the table, it’s especially well-suited for recipes where maple needs to stand out.
