We have about 500 taps, so we are still small enough to pay attention to detail but we also have enough taps to be able to keep up pretty well with local demand. We use a traditional wood-fired evaporator and although we have not gone through the process to be Certified Organic, our farm, our process, and our outlook are all 100% friendly with the nature surrounding us.
